A restaurant is the most hostile environment in commercial HVAC. You have a kitchen exhaust hood pulling thousands of cubic feet per minute out of the building. You have cooking equipment throwing enormous sensible heat into a confined space. You have a dining room full of people, each generating heat and moisture.
